Caracterización organoléptica de galletas artesanales en niños escolares del municipio de Zacapa

Abstract

OBJECTIVE: to evaluate the organoleptic characteristics of artisan cookies based on Incaparina and peanut butter. METHOD: A quasi-experimental descriptive study was carried out in 28 school-age children from an educational institution in the municipality of Zacapa. RESULTS: The acceptance of organoleptic characteristics was studied, finding the female gender as predominant in 54% (N=15) and the male gender in 46% (N=13), texture, smell, flavor and color characteristics were evaluated. CONCLUSION: The organoleptic characteristics with the highest acceptance were smell and taste in 76% (N=21).
